  1. 2 avocados
  2. 1/2 cucumber, diced
  3. 1/2 yellow squash, grated
  4. 1/2 zucchini, grated
  5. 1 clove garlic, grated or minced
  6. Juice from half a lemon (or lime)
  7. Fresh cilantro, chopped (however much you'd like)
  8. Himalayan sea salt, to taste
  9. Lemon or a lime wedge
  1. Mash avocados and mix all ingredients in bowl. Garnish with lemon or lime wedge.

Cinnamon & Vanilla Chia Seed Pudding

This is a delicious yet simple recipe high in Omega-3 fatty acids, fiber and protein. Make your pudding at night (like I do) and in the morning you will have a healthy and delicious treat waiting for you. Enjoy for breakfast by adding fresh berries and raw walnuts or save it for later and enjoy this yummy sweet treat as is!

You will need:

4 tablespoons chia seeds

1 cup almond milk

1 teaspoon vanilla extract

1 tablespoon organic pure maple syrup (or 5-10 drops of liquid stevia)

1 teaspoon cinnamon

Banana or fresh berries (optional)

Raw walnuts (optional)



Combine all of the ingredients in a blender, and blend until you have a uniform consistency (a minute or so). Transfer to a sealed container and set in the fridge to chill overnight.

Shed Fat, Naturally?

This is quite an interesting concept to most people. Working towards a fat and weight loss goal can seem almost far fetched at times, especially if you are living with a chronic autoimmune disorder. I have to tell you that your health and weight loss goals are achievable. Put in a little effort and you will see amazing health rewards.

I started eating paleo and following the 30 day challenge about 2 weeks go. The paleo diet is known to naturally maximize fat loss, as well as reduce if not eliminate symptoms for people living with an autoimmune disorder.

I am feeling (and looking) better than I had been prior to starting the 30 day challenge and continue to notice a change in my MG (auto-immune disorder) symptoms for the better. I have more energy, I feel stronger, look leaner (I’m loosing body fat, finally!), while eating more and sleeping better.
